Red and green pasta stir-fry with the Ultimate Garlic Spread


Hello folks! This is a quick post to share a simple dish I made with just pasta, some veges and the Ultimate Garlic Spread (click here for the recipe!).

 
Laura Vitale said in her video that you can use the spread as a base for any stir-fry, so I decided to give it a try. I decided to go with mushrooms (my pasta has to have mushrooms!) and red bell peppers (so fabulous against the green garlic spread!). I used spaghettini but any thin pasta will do the trick. You can up the amount of garlic spread and pepper if you prefer a stronger flavour.  If your spread is already chilling in the fridge and your pasta is already cooked, this dish will take about ten minutes tops.

Red and green pasta stir-fry with the Ultimate Garlic Spread

Ingredients:
200g spaghettini or any pasta of your choice, cooked as per package instructions. Reserve 1/4 to 1/2 cup starch (pasta) water
1/2 cup sliced mushrooms
1/2 cup sliced red bell pepper
2 tbs Ultimate Garlic Spread
Salt & pepper to taste
1 tsp fresh chopped parsely to garnish (optional)

Directions:
1. Preheat pan to medium high. Add Ultimate Garlic Spread and stir for 2-3 minutes. Add vegetables and stir to coat for another 3-4 minutes.

 2. Add pasta, season with salt and pepper to taste, and stir to combine for about 3-4 minutes. Pasta will be a little dry, so add some of the reserved starch water just enough to moisten (I used about 1/4 cup).
3. Serve hot with a sprinkle of fresh chopped parsely.


Now throw on some 6" heels, pretend you're Julia Child and say "Bon apetit!" with your most dramatic flourish.
